Ca si oricare alt produs laptele poate fi categorisit in functie de cantitatea de grasime continuta, vitamine si minerale.
Astfel avem:

Lapte UHT cu adaos de frisca 3.2% grasime
Lapte UHT integral 3.5% grasime
Lapte UHT Profesional (destinat spatiilor HORECA) 3.6% grasime
Valorile nutritive pentru lapte UHT degresat 0.1% grasime pentru 100 ml produs sunt:
